Three Square’s Restaurant Week is here upon us again, and once again we are given the chance to let our pleasure of a prixe-fixe meal develop into the assistance of thousands of hungry people in Nevada. Quietly one of the best places in town for really interesting fine dining, this is one menu you can sample not only truly select fish like Loch Etive Ocean Trout (with bacon ragout), but also a truly great steak. B&B Ristorante
Here is a very special dining choice, because in addition to the antipasti, the choice of entrée, and the dessert, they are doing a pasta course. Estiatorio Milos
This renowned Greek restaurant is known for their unparalleled seafood sourcing and wine, but also for their somewhat high prices. While their weekday lunch special is the best way to try their cuisine, this dinner is an even easier way to take that plunge. RM Seafood
Chef Rick Moonen and team has a lovely selection of inspired plates, from creative sushi to a hearty grilled Niman Ranch skirt steak with Korean BBQ marinade. This is a restaurant with an out-of-this-world menu of small bites, and with this menu, you don’t have to choose! Between the first and second course, you get to choose three of the six selected dishes. Their specialties are re-imagined old-school Ritz Carlton classics, so try their “Waldorf Salad” the pan roasted Atlantic salmon with a lemon “cloud”. Sage

The seasonal and world-class fare at Sage is worth frequent visits, especially now they have some dishes from their new Chef de Cuisine, Christoph de Lellis. Their sourcing of fine produce is second to none, and dishes like the summer melon salad or the chilled Brentwood white corn soup exemplify that. Braised beef belly with polenta is likely the only dish of its kind you’ll find in Vegas, and their Milk Chocolate and Earl Grey panna cotta proves to any diner why they are famous.
