Chayo Opens at The Linq

We decided to check out how The LINQ was progressing and while there, we grabbed a bite at Chayo Mexican Kitchen + Tequila Bar; the first of many restaurants to open at the new Vegas destination.

The lively restaurant features modern Mexican cuisine served up in a night club atmosphere complete with a house DJ and Chayo, the mechanical bull, positioned smack dab in the center of it. If you are brave/drunk enough to ride Chayo and last 60 seconds, you will get your picture taken for their hall of fame. Even if you don’t last that long, you can still get a shot of tequila. Sadly, nobody braved a ride on Chayo during our lunch visit.

Appetizers and small bites ranged from $8 – $14 and entrees ranged from $16 – $32. We tried the tortilla soup and the queso fundido as appetizers and shared the chicken fajitas for our main entrée. Had I known Spanish or paid closer attention to the menu description, we wouldn’t have been surprised that this queso is not a dip, but, in fact melted cheese. It is served in a lidded cast iron container with mini flour tortillas on the side. Although tasty, it was not the semi-healthy appetizer we were hoping for. Next time, we will try the guacamole instead. The seasoning mix used on the fajitas didn’t quite hit the mark for us, however we did find the portion size large enough for two people to share without feeling deprived.

Even though our budget didn’t allow us to enjoy a cocktail, we did manage to check out the bar. You can order specialty cocktails by the glass or pitcher and even sample one of the sixty varieties of tequila. They also feature a good selection of beer and wine. When The Linq is finished, we imagine this bar will make a good stop for anybody looking to enjoy a drink in a club like atmosphere, before taking a spin on the High Roller.
